Raw Delight

1/2 cup buckwheat groats
1 cup sunflower seeds
1 cup pumpkin seeds
1 cup pecans or walnuts
1 cup fine coconut flakes
3/4 cup cocoa nibs
1 cup raisins or dried cranberries (may use more than one cup)
1 tsp Himalayan salt
1 tsp vanilla powder (or use regular vanilla extract if powder not available)
1 tbsp lucuma powder
3/4 cup maple syrup
1/4 cup honey

Soak the buckwheat groats, sunflower seeds, and pumpkin seeds in one large bowl (in a large colander that fits the bowl) for six hours, then rinse and drain well. Also soak the pecans or walnuts, but in a separate colander and bowl. Once they are drained, chop them roughly but keep them separate from the other 3 seeds.
Once all of the seeds and nuts are soaked and well-drained and the nuts chopped roughly, place everything in a very large bowl and mix together with a large spoon.
Spread about 1/2” thick on 2 Teflex dehydrator sheets (or 2 large cookie sheets covered with parchment) and dry in a dehydrator (or oven) for 8-10 hours on each side at about 115 degrees.
Store sealed in refrigerator.
