Malabar Spinach

It’s that time of year to plant seeds!  I have multiple varieties of tomato plants coming up under lights.  Asparagus is ready to be picked and we are preparing our gardens for corn, peas, beans, okra, cucumbers, peppers, potatoes, and watermelon.  If you are a proponent of a “green smoothie” and you live where it is hot in the summer, then you realize there are not a lot of good options for growing leafy green vegetables in the summer.  I have found that the Malabar spinach grows very well in full sun and hot temperatures.  Although not suited for salads, it is very good for smoothies.  As you can see, it is a very prolific plant.
